One of our favorites is the Praline Layer Cake – a delightful dessert featuring moist layers of cake, rich glaze, and crunchy praline topping. Perfect for any occasion, this cake offers a perfect blend of textures and flavors that will leave your guests asking for more. Here’s how you can make it at home!
Praline Layer Cake Recipe
- 150 grams butter
- 175 grams sugar
- 1 1/2 tsp lemon zest
- 6 egg yolks
- 4 egg whites
- 125 ml rum
- 125 grams all-purpose flour (sifted)
- 90 grams cornstarch (sifted)
- 1 tsp baking powder (sifted)
The Glaze Recipe:
- 100 ml water
- 125 grams sugar
- 5 egg yolks
- 450 grams butter, softened
- 3 tbsp rum
The Praline Recipe:
- 6 tbsp water
- 225 grams sugar
- 150 grams sliced almonds

Cake Preparation
- Preheat the oven to 180°C (350°F).
- Grease a 22 cm round cake pan with butter and lightly dust it with flour.
- Beat butter, sugar, and lemon zest until smooth.
- Add egg yolks and egg whites one by one, beating until fluffy.
- Gradually mix in rum and sifted flour, cornstarch, and baking powder.
- Pour the batter into the prepared pan and level it out.
- Bake for 40 minutes or until a toothpick comes out clean.
- Cool the cake for 10 minutes in the pan before transferring it to a wire rack.
- Once cooled, slice the cake into three horizontal layers.
2. Glaze:
- Boil water and sugar in a saucepan until the sugar dissolves. Set aside.
- Whisk egg yolks until thick and pale.
- Slowly pour the hot syrup into the egg yolks while whisking constantly.
- Continue whisking until the mixture cools down.
- Add softened butter and rum, mix well.
- Cover with plastic wrap and refrigerate for 30 minutes.
3. Praline:
- Grease a square baking tray.
- In a saucepan, heat water and sugar until the sugar dissolves.
- Add the sliced almonds and stir until the sugar crystallizes.
- Pour the mixture into the greased tray and spread evenly.
- Allow it to cool and harden, then break it into pieces.
Assembling the Cake
- Spread a layer of glaze on the first cake layer.
- Place the second layer on top and repeat with the glaze.
- Stack the third layer and cover the entire cake with the remaining glaze.
- Sprinkle praline pieces on top of the cake.
5. Serving:
- Cut the cake into slices according to your preference.
- Serve and enjoy the crunchy, sweet praline topping with the soft cake layers.
