Instructions Of Making Beef Redang

1Clean the beef thoroughly and let it drain.
2Separately grind the red chilies into a smooth paste.
3Grind shallots, garlic, lemongrass, fennel seeds, nutmeg, cumin, coriander, cloves, black pepper, candlenuts, galangal, and ginger into a fine paste.
4Heat oil in a large pan and sauté the chili paste until fragrant. Then, add the spice paste and continue sautéing until aromatic. Add bay leaves, turmeric leaves, and kaffir lime leaves.
5Once fragrant, add the beef and stir until it absorbs the spices and releases its juices. No additional water is needed. Season with salt, sugar, and seasoning as desired.
6After about an hour, when the liquid has reduced, add thick coconut milk and fried shredded coconut. Stir every 5 minutes to prevent burning. Adjust seasoning if necessary.
