At Le Stanze Bistrot Cafe, we pride ourselves on creating comforting dishes with a touch of love. This recipe guides you through making light, pillowy chicken bakpao filled with tender, flavorful chicken in a sweet soy sauce glaze.

Bao Dough A150 g low-protein flour, 100 g sugar, 3 g yeast, 50 g cornstarch, 80 ml cold full cream milk, 6 g baking powder
Bao Dough B75 g unsalted butter, 5 g salt
Filling350 g chicken fillet, 1 medium onion, 6 cloves garlic, 6 shallots, 400 ml water, 5 tbsp soy sauce, 1 tsp salt, 1 tsp seasoning powder, 1 tsp pepper, 1 tsp nutmeg powder, sliced green onions as needed

Instructions

StepMethod
1. Prepare Starter DoughMix all starter ingredients and knead until smooth. Cover with plastic wrap and leave in a warm spot (~30°C) for 2–4 hours.
2. Cook FillingSauté onions, garlic, and shallots until fragrant. Add minced chicken, cook until fully done. Pour in water, soy sauce, and seasonings. Simmer until liquid is absorbed. Stir in green onions, then set aside.
3. Make Bao DoughCombine starter dough with Dough A. Knead until half smooth. Add butter and salt (Dough B), knead until elastic and soft, able to stretch thin without tearing.
4. Shape BunsDivide dough into 20 pieces (~50 g each). Let rest 15 minutes. Flatten each piece, add ~1 tbsp filling, and shape into buns or flower shapes. Pinch the top slightly to create a “waist” so buns rise upward, not sideways.
5. Final ProofingLet buns rest in a warm place for 45 minutes. Meanwhile, prepare a steamer with the lid lined with a cloth to prevent dripping.
6. Steam BunsSteam buns over low-medium heat for 15 minutes. Remove and serve warm.

  1. Keep the dough soft and elastic, not dry.
  2. Ensure the filling is not too wet to prevent soggy buns.
  3. Shape buns with a slight indentation at the top to control rising.
